1. Clean oyster meat first. Boil in hot water for 2 mins. Rinse and drain.
2. In a bowl, beat in two eggs. Put in oyster meat, chopped spring onion, salt, 2 tsp tapioca. Mix all well.
3. Heat a little oil in the pan with high heat.
4. Pour egg mixture into pan. Turn to middle heat.
5. When the bottom egg solidify, flip it over. Keep heating till two sides are done.
6. Serve with hot & sweet chili sauce.
