Tofu Vegetable Pancake


Put a small pack of tofu (I used silk tofu) in a large bowl. Mash it with a spoon. 

Then add in chopped vegetables you like, which I chose carrot and water spinach. (Chop them into small bits and add into mashed tofu).

Add in salt and black pepper powder. Mix them well. ( tofu should be drained before smashed, because there is a lot of water in tofu. )

Make tofu and vegetable mixture into small pancakes. And coated with flour first, then egg.

Fry in pan till both side become golden brown.


Quick, easy and yummy.
